Join us on a baking journey where you’ll be learning different baking techniques. You’ll get full hands-on experience on doing the following bakes:


DAY ONE: MAKE ME A BAKER-CAKES (13th Dec)


  1. Pandan Gula Melaka Cake
  2. Earl Grey Chocolate Mousse Cake

Course Details:

1)How to prepare, bake and assemble a lychee rosette cake

-How to bake a vanilla sponge cake (hands on; pair work)

-How to prepare lychee buttercream (demonstration)

-How to assemble a lychee rosette cake (hands on, individual work)

2) How to prepare, bake and assemble an earl grey white chocolate mousse cake

-How to bake a chocolate brownie cake (hands on; pair work)

-How to prepare earl grey mousse layer (hands on; pair work)

-How to make white chocolate mirror glaze (demonstration)

-How to cover a cake with glaze and assemble an earl grey white chocolate mousse cake (hands on; individual work)

Take Home:

  1. One 6 inch lychee rosette cake
  2. One 6 inch earl grey white chocolate mousse cake

DAY TWO: MAKE ME A BAKER-PASTRY (14th Dec)


  1. Choux Pastry-craquelin cream puffs
  2. Lemon Tarts (Tarte au Citron)
  3. Pear Frangipane Tart

Course Details:

1) How to prepare choux pastry (hands-on, pair work)

2) How to pipe out choux pastry batter into puffs and eclairs (hands-on, pair work)

3) How to prepare craquelin (demonstration)

4) How to prepare pastry cream (hands-on, pair work)

5) How to prepare diplomat cream (demonstration)

6) How to prepare sweet shortcrust pastry (hands-on, individual work)

7) How to prepare lemon curd (demonstration)

8) How to prepare almond cream (demonstration)

Take Home:

  1. Six craquelin cream puffs
  2. Four tarts (2 lemon tarts, and 2 pear frangipane tarts)

DAY THREE: MAKE ME A BAKER-DESIGNER MACARONS & BREAD (15th Dec)


  1. Japanese style bread loaf
  2. Melon Pan
  3. Designer Macarons

Course Details:

2) How to prepare cookie crust topping for bread (demonstration)

3) How to prepare macaron batter (hands on, pair work)

4) How to pipe macaron batter (hands on, individual work)

5) How to assemble macarons (hands on, individual work)

Take Home:

  1. One bread loaf
  2. Four melon pans
  3. Approximately 10 macarons
Cost fee for all 3 days: $500 (Usual $540), fully claimable from skillsfuture credits
Cost fee for individual day: $180, fully claimable from skillsfuture credits.
Please note:
  • Our classes are fully hands-on; you will get to do from scratch. Depending on the recipes, you might be working individually or in pairs
  • Lunch is not provided
  • You are welcome to bring home all your completed bakes
  • A certificate of attendance will be issued if you attend all three days
